These have to be my absolute favorite pancakes I’ve ever home made!
Chalk full of fiber, using only the natural sweetness of bananas, they are some of the healthiest flapjacks around!
For this recipe, you can hand-mash everything into a bowl and have a lovely textured pancake, or you can use a blender and liquefy the ingredients into a silky smooth batter for lump-free pancakes. The choice is yours!
You will need-
1 large ripe banana
2 eggs
1/4 cup of your favorite oats
oil/butter for cooking
a pinch of salt
STEP 1-
Smash the banana into your bowl of choice, once smoothed out, add all your oats, eggs, salt to taste. Optionally, a dash of cinnamon, or tsp of vanilla extract are definitely a boost in flavor.
STEP 2-
Blend or whisk until the desired consistency have been achieved.
STEP 3-
Cook in your favorite butter or oil in a medium-heat pan for 1-2 minutes per side until desired level of golden brown delicious.
As with any pancakes, top with fresh fruit, syrup, powdered sugar or anything your heart desires! There really is no limiting these amazing pancakes!
