Sheet Pan Chicken Pitas With Tzatziki

Total Time: 1 hr.

Ingredients

Step 1 Ingredients-

  • 1/3 cup full-fat plain Greek yogurt
  • 1/4 cup extra virgin olive oil
  • 1 1/2 pounds boneless skinless chicken breasts or thighs, cubed
  • 1/4 cup fresh lemon juice
  • 6 garlic cloves, chopped
  • 2 shallots, chopped
  • 1 tablespoon smoked paprika
  • 1 tablespoon chopped fresh oregano
  • red pepper flakes
  • Pinch to taste, Kosher salt and black pepper

 

Feta Tzatziki (step 3)

  • 8 ounces feta cheese
  • 1/4 cup plain Greek yogurt
  • 2 cloves garlic grated
  • juice from 1 lemon
  • 1/3 cup plain Greek yogurt.
  • 1-2 Persian cucumbers, shredded
  • handful of dill leaves
  • pinch to taste kosher salt


    Plus-

    6 fresh pitas or naan warmed

 

Step #1= 20+ mins

Combine all step 1 ingredients above, and let mixture mull in a bowl for at least 20 mins, up to overnight.

Step #2= 30 mins

Preheat oven to 425. Bake chicken mixture on a flat sheet pan for 15 mins. Remove from oven and toss to ensure even cooking. Then back into oven for another 15 mins. Edges should just start to become crispy.

Step #3= 5 mins

Combine first 4 ingredients of list in blender until smooth. Fold in remaining ingredients to make a Tzatziki sauce.

Step#4= EAT

The traditional way to assemble is start with the Pita/Naan. Add a spoonful of Tzatziki sauce and spread. Then chicken mixture. Topped with greenery of your choice. Extra Tzatziki dripped over the top for good measure.
